Edible Cookie Dough Bites

This year, we're making cookie dough ~romantic~ with these edible cookie dough bites!

For me, February 14th is all about the sweets. That's why every Valentine's Day, for my gift, I always bake Nick something. It's usually brownies or chocolate cupcakes, because those are the only sweets he actually cares about. I know, he literally lives with a baking blogger and couldn't care less about most of the treats I make.

These cookie dough bites are the perfect edible Valentine's Day gift! Why? Here are a few reasons:

edible cookie dough bites

  • They're so easy! They're made with just a few ingredients that you probably already have on-hand.
  • They are quick. This recipe comes together super fast. If you need a last-minute or low-effort Valentine's Day treat, this is it! Seriously, anyone can make this recipe.
  • They're festive. When molded into heart-shapes, covered in pink candy coating, and adorned with heart-shaped/pink sprinkles, they'll look 10x better than any store-bought box of candies.
  • They're thoughtful. If you know your Valentine loves chocolate chip cookie dough, they'll be touched you remembered that detail about them! Plus, a homemade gift takes time and energy, which shows you care. It is the day of love, after all.

Skip the heart-shaped box of Russel Stover's from Walgreen's. Does anyone actually like those?

If your Valentine is a fan of chocolate chip cookie dough, I promise they will love this recipe!

Ingredients, notes, and substitutions

Here's all the ingredients you'll need to make these cookie dough bites

  • Unsalted butter: Room temperature. You can substitute salted butter if you want. If using salted butter, reduce the amount of salt in the recipe.
  • Granulated sugar: For sweetness.
  • Light brown sugar: Can substitute for dark brown sugar if that's all you have.
  • Heavy cream: Can substitute with milk. You may also use almond milk, or any other plant-based milk of your choice.
  • Vanilla extract: For flavor
  • All-purpose flour: I recommend you heat-treat the flour. Raw flour has the potential to carry food-borne pathogens, and must be heated to ensure it's safe to eat raw. To heat-treat flour, add it to a microwave-safe bowl. Heat on high, 30 seconds at a time, stirring between each interval. Stir well to make sure none of the flour burns. Use an instant-read thermometer to test the flour in several places to make sure it has reached 165°F throughout. You may also spread the flour onto a baking sheet and bake it at 300ºF for about 5 minutes.
  • Salt: Balances the sweetness. Reduce/omit if using salted butter.
  • Mini chocolate chips: Semi-sweet are best! I highly reccommend using mini chocolate chips instead of regular sized, as those may be too big.

If you've ever made chocolate chip cookies, you've basically made this recipe before. The method is the same, just some ingredients are different!

First, beat butter and sugars with an electric mixer on medium speed, until light and fluffy, about 2-3 minutes.

Mix in the cream and the vanilla extract. Now, stir in the heat-treated all-purpose flour and the salt and mix on low speed until fully combined.

Lastly, stir in the chocolate chips.

You can enjoy the edible cookie dough immediately, straight from the bowl with a spoon, or form into individual heart-shaped bites at this point.

edible cookie dough bites hearts

To make heart-shaped cookie dough bites like the ones you see here, you'll need:

  • A silicone heart mold: with multiple cavities
  • Candy melts: pink, red, or any color/flavor you want
  • Sprinkles: We love festive sprinkles! Heart-shapes, pink, glittery, whatever. Optional, but recommended for maximum cuteness.

First, press the edible cookie dough you made into the silicone heart-shaped molds. Refrigerate until firm, about 30 minutes.

Next, melt the candy melts according to the directions on the package. Remove the cookie dough from the molds. Dunk each heart into the melted candy, coating completely. Let the excess drip off and transfer to a sheet of parchment. Add sprinkles while still wet. Let the hearts dry and harden completely.

Store the cookie dough bites in an airtight container in the refrigerator for up to 3 days.

Make it vegan/dairy-free

Special diet requirements? No problem! Edible cookie dough bites can easily be made vegan/dairy-free. Substitute dairy-free margarine for butter, and replace the cream with a plant-based milk alternative such as almond, soy, or oat milk.

That's it! I hope you and your Valentine love these edible cookie dough bites as much as me and mine!
