Cookie butter stuffed cookie bars are the answer to your cookie butter cravings!

Do you ever just buy cookie butter and never use it because you don't know what to do with it? Or, do you ever buy it and then just eat it with a spoon from the jar?

Because I do both of those things.

I wanted to make an easy recipe that would satisfy my cookie butter craving, and these cookie butter bars might be even better than eating it straight from the jar. I mean, who doesn't love chocolate chip cookies?

What are cookie butter stuffed cookie bars?

These bars feature a thick, luxurious layer of cookie butter (AKA Biscoff) sandwiched between two layers of cinnamon-spiced cookie dough. The subtle flavor of the cinnamon is just enough to pair perfectly with the buttery, gingerbread-like, spiced cookie butter flavor that we all know and love!

Cookie butter stuffed cookie bars are baked in a 9x13-inch pan, with one layer of cookie dough on the bottom, cookie butter in the middle, and more cookie dough on the top. The bars bake up so thick, gooey, and perfectly chewy!

What do I need to make these?

Here's everything you'll need to make these cookie butter bars:

  • all-purpose flour
  • baking soda
  • salt
  • cinnamon- the cinnamon spices these cookies up (literally lol) so it's not just your average cookie! You'll love the way the cinnamon in the dough compliments the flavor of the cookie butter.
  • butter- unsalted, at room temperature
  • granulated sugar
  • brown sugar
  • vanilla extract
  • eggs
  • chocolate chips- I used semisweet!
  • cookie butter- I used Trader Joe's brand cookie butter, but you can also use Lotus' Biscoff cocokie butter.

How to make cookie butter stuffed cookie bars

Making these chocolate chip cookie butter bars is just like making chocolate chip cookies.

First things first, you need to prepare your 9x13-inch pan. I like to spray it with non-stick spray, then line it with parchment paper, making sure there is some overhang of paper on the sides. This will help you to lift the bars out of the pan once they are baked.

First, combine all the dry ingredients; flour, baking soda, salt and cinnamon. Next, in a large mixing bowl using an electric mixer, beat together the butter, granulated sugar, brown sugar, and vanilla until it becomes light and creamy. Now add the eggs one at a time, beating well after each addition. Once combined, gradually beat in the flour mixture, and then stir in the chocolate chips.

Evenly spread half the cookie dough mixture into your prepared pan. Next, spread the cookie butter on top of the layer of cookie dough. Top the layer of cookie butter with the other half of the cookie dough. It's okay if it doesn't completely cover the layer of cookie butter.

To spread the cookie dough into the pan evenly, I like to use either the back of a measuring cup or an offset spatula to spread it all out and smooth it down.

Bake the cookie butter bars in the preheated oven for about 20 minutes.

Cookie butter stuffed cookie bars are like eating a thick, soft chocolate chip cookie smothered in cookie butter. In this recipe, cookie butter is sandwiched between two layers of cinnamon chocolate chip cookie dough and baked to create the perfect dessert to satisfy your sweet tooth!

  • 9x13-inch pan
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar (packed)
  • 1 1/2 tsp vanilla extract
  • 2 eggs
  • 2 cups chocolate chips
  • 1 cup cookie butter
  1. Preheat oven to 350ºF. Prepare 9x13-inch pan by spraying with non-stick spray and lining with parchment paper.

  2. Combine dry ingredients; flour, baking soda, salt and cinnamon. Next, in a large mixing bowl using an electric mixer, beat together butter, granulated sugar, brown sugar, and vanilla until it becomes light and creamy. Now add the eggs one at a time, beating well after each addition. Once combined, gradually beat in the flour mixture, and then fold in the chocolate chips.

  3. Add half of the cookie dough to prepared pan. Spread the dough evenly over the bottom of the pan. Add the cookie butter and spread evenly over the layer of cookie dough. Add the other half of the cookie dough on top of the cookie butter; its okay if it doesn't completely cover the cookie butter.

  4. Bake in preheated oven at 350ºF for 20-25 minutes, until set in the center. Allow the bars to cool before slicing. Store in an airtight container for up to 1 week.
