Like the smart kid he is, my younger brother specifically requested I make these, so I decided to deliver!

We always grew up eating cheesecake brownies as a kind of special occasion thing, and my dad has always loved them. So, being that my family is so fond of cheesecake brownies, I needed this recipe to be super next-level delicious… and according to my favorite cheesecake brownie connoisseurs (and worst critics) I succeeded!

Okay so you know how amazing they are, but now you must be thinking, “I need these in my life, but what do I need to make this glorious dessert?” Right, well here’s the entire list. You probably already have most (or all) of these ingredients!

  • Granulated sugar
  • Unsalted butter
  • Eggs
  • Vanilla
  • Unsweetened cocoa powder
  • Vegetable oil
  • All-purpose flour
  • Baking soda
  • Cornstarch
  • Salt
  • Cream cheese

HOW TO MAKE CHEESECAKE BROWNIES

Great news: the brownies can be made in one bowl, and the cheesecake part can be made in just one bowl as well.

"Wait, I only need two bowls to make such a beautiful, seemingly complex mashup of the two best desserts ever??”

I hear ya. It sounds crazy, but you’re correct. Just two bowls. Don’t freak out.

Anyway, first you’re going to make the brownies. Start by combining melted butter, granulated sugar, eggs, and vanilla in the bowl of a mixer. After that, add in the vegetable oil and cocoa powder, and mix.

With a rubber spatula, stir in the dry stuff: flour, baking soda, corn starch, and salt until combined.

Take out about 1/3 cup’s worth of the brownie batter, and set it to the side. This will be for making those swirls in the cheesecake part later.

Now, work on the cheesecake. This part is so simple, as it just consists of:

  • Cream cheese, softened
  • Granulated sugar
  • Egg
  • Vanilla

Beat together the softened cream cheese and the sugar until the mixture is smooth and creamy. Then, add the egg and vanilla extract and combine. Done!

ASSEMBLING CHEESECAKE BROWNIES

In a 8x8-inch pan lined with parchment paper, evenly spread the larger amount of brownie batter. Then, pour the cheesecake mixture on top of the brownie batter and spread evenly as well.

Use the reserved 1/3 cup of brownie batter to make dollops all over the surface of the cheesecake mixture. Create swirls of brownie batter in the cheesecake mixture by dragging a sharp knife or skewer through the batter in figure 8 or S patterns, until you like how it looks.

BAKING

Bake at 325°F for 30 minutes, until the surface of the cheesecake looks set, or a toothpick inserted into the center comes out clean.

Let the brownies cool completely before cutting them into squares. Waiting is probably the hardest part of this recipe but you can DO it!!!

Cheesecake Brownies

Creamy cheesecake tops a fudgy brownie in this ultimate crowd-pleasing and decadent dessert. They are super easy to make, come together so quickly, and are literally two desserts in one! Long story short, you can’t go wrong with this recipe.

Brownies

  • 1 1/4 cups granulated sugar
  • 5 tablespoons unsalted butter (melted)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1/3 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1/8 teaspoon baking soda
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt

Cheesecake

  • 8 ounces cream cheese (softened)
  • 1/4 cup granulated sugar
  • 1 egg
  • 1/4 teaspoon vanilla extract
  1. Preheat oven to 325°F. Line an 8x8-inch pan with parchment paper and set aside.
  2. With a stand mixer using the paddle attachment, or with a hand mixer, combine granulated sugar, melted butter, eggs, and vanilla extract in a bowl. Add the cocoa powder and vegetable oil and mix. Using a rubber spatula, mix in the flour, baking soda, corn starch and salt. Reserve 1/3 cup of the brownie batter and set aside.
  3. In the bowl of a mixer, beat together cream cheese and granulated sugar until creamy. Add in egg and vanilla extract and combine.
  4. Add the brownie batter to prepared 8x8-inch pan and spread evenly. Pour cheesecake mixture on top of the brownie mixture. Using a spoon, create dollops with the reserved brownie batter on top of the cheesecake mixture. Using a sharp knife or skewer, create swirls by dragging it through the batter.
  5. Bake for 30 minutes in preheated oven, for 30 minutes, until the surface of the cheesecake looks set, or a toothpick inserted into the center comes out clean. Allow the brownies to cool completely before cutting them into squares and serving.
