Strawberry frosted sugar cookies: the softest cut-out sugar cookie!

These cookies aren’t just adorable- they’re delicious too! The recipe for these simple sugar cookies comes from Sally’s Baking Addiction- it’s definitely my favorite recipe for making cut-out sugar cookies.

These cut-out sugar cookies come out super soft, buttery and tender. They stay soft for a while, too!

The cookies also hardly spread while baking, which makes them perfect for cutting into shapes.

Simple strawberry icing

When I think of Valentine’s day, I always think of strawberries. So instead of a traditional vanilla icing for these cutout sugar cookies, I went with strawberry!

The secret? Freeze dried strawberry powder! I think everyone should have a bag of this in their pantry, especially if you love strawberry!

Plus, it’s a great way to add natural color to things.

For this icing, we’re going to use just powdered sugar and a little bit of milk, then add the freeze dried strawberry powder.

First, I separated the icing into 3 different bowls before adding the strawberry, so that I could get 3 shades of pink.

Then, used about 1/2 tablespoon of strawberry for the lightest pink, and about 8 for the darkest shade.

My advice is just to add the strawberry powder tablespoon by tablespoon, until you get your desired color and flavor of icing.

Sugar cookies:

  • Flour
  • Baking powder
  • Salt
  • Unsalted butter
  • Granulated sugar
  • Egg
  • Vanilla

Strawberry Icing:

  • Powdered sugar
  • Milk
  • Freeze dried strawberry powder
  • Food coloring markers, for decorating

You can use one heart-shaped cookie cutter and make them all the same, or an assortment of different shapes and sizes of hearts for a cute eclectic collection of cookies!

I got the best set of 5 different heart-shaped cookie cutters from Target for $3. They’re all different sizes and styles of hearts, which I love!

Strawberry Frosted Sugar Cookies

If you don’t have a heart-shaped cutter, use whatever other shape you like.

For example, it would be cute if you used letter shaped cutters to spell out someone’s name, or wrote out “Be Mine” for Valentine’s day!

Alternatively, if you don’t have any cutters, go with the classic circle shape. You can basically cut out a circle with anything- an empty can, a cup, a wine glass- and decorate them with the icing…and maybe some sprinkles!

Do I have to use freeze-dried strawberries?

No! I know it’s definitely not something everyone has on hand.

If you happen to have whole freeze dried strawberries, pulse them in a food processor to make them into a powder.

However, if you don’t have either, feel free to use a few drops of food coloring and strawberry extract to achieve a similar frosting.

Strawberry Frosted Sugar Cookies

A soft sugar cookie meets sweet strawberry icing in this cookie recipe that’s perfect for Valentine’s Day! Write messages on the cookies after the icing dries using food coloring markers for an adorable, edible gift!

  • Food coloring markers
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 1 egg (room temperature)
  • 2 teaspoons vanilla extract

Strawberry Icing

  • 2 cups powdered sugar
  • 3 tablespoons milk
  • 1-8 tablespoons freeze dried strawberry powder (depending on desired color and flavor.)
  1. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  2. In the bowl of a stand mixer fitted with a paddle attachemnt, or a large bowl with a hand mixer, beat together butter and sugar until smooth and creamy. Add in egg and vanilla, then combine. Add dry ingredients to wet ingredients and mix until combined.
  3. Divide the dough into 2 equal portions. Place each portion between two sheets of parchment paper. Flatten, and then roll out with a rolling pin to about 1/4 inch thickness. Repeat with the second portion of dough, and transfer to the freezer to chill for about 30 minutes.
  4. Once chilled, preheat oven to 350°F. Line baking sheets with parchment paper and set aside. Remove the dough from the fridge and cut into shapes using a cookie cutter. Place the shapes on prepared baking sheet, about 2 inches apart. Bake for 11-12 minutes. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before decorating.

Strawberry Icing

  1. In a medium bowl, add powdered sugar and milk. Whisk to combine. If you want to make several different shades, divide the icing into that many bowls. Add desired amounts of freeze dried strawberry powder to each bowl and whisk to combine.
  2. To decorate, add the icing to a piping bag or a plastic bag. Cut off a very small hole in the corner of the bag and pipe the icing onto the cookie in a heart shape, then fill in. Alternatively, spread the icing onto the cookie using an offset spatula.
  3. If decorating with food coloring markers, allow the cookies to dry for 24 hours before writing on them.
