Lavender Lemonade

Since lavender is known for its calming properties, this lemonade is a great drink to make for a low-key weekend where you just want to relax. Pour it in a mason jar and take it to the pool for peak summer indulgence. Another idea: spike this with vodka or gin for a boozy lavender lemonade cocktail.

All lavender is edible, but English lavender is most commonly used for cooking. I used dried lavender, but if you’re extra fancy and use fresh lavender, make sure it hasn’t been sprayed with pesticides or something nastyyyy like that. Lastly, don’t be tempted to use too much!- a little goes a long way. We’re going for a nice, light floral taste here, not… soap.

Lavender Lemonade

  • 1 tablespoon lavender (fresh or dried)
  • 1 cup white sugar
  • 2 cups boiling water
  • 1 1/2 cups lemon juice (fresh squeezed)
  • 2 cups water
  1. Add the 1 cup of sugar and 1 tablespoon of lavender to a large bowl. Using your fingers, rub the lavender buds into the sugar.
  2. Pour 2 cups of boiling water over the lavender sugar and stir until the sugar is completely dissolved. Cover and let steep for at least 30 minutes.
  3. While the lavender is steeping, juice your lemons.
  4. Strain your lavender syrup and pour into a pitcher. Add the 1 1/2 cups of lemon juice and 2 cups of water.
  5. Stir the mixture and adjust for taste- add more sugar if too tart, and more lemon juice if it is too sweet.
  6. Either add ice to enjoy right away, or stick in the fridge to enjoy later.
  7. Garnish with lavender stalks, rosemary sprigs, and lemons!
