What are frosting stuffed funfetti cookies?

I wanted to make a funfetti cookie recipe, but I wanted to make them different and special- not just another funfetti cookie recipe on the internet. So I made a mental list of everything that reminded me of a funfetti birthday cake.

First, frosting! because you obviously can't have a cake without frosting. These cookies are stuffed with vanilla frosting. Kind of like... an inside-out birthday cake?

Next, sprinkles! Obviously, the essence of funfetti is rainbow sprinkles, which are mixed into the dough. They make these frosting stuffed funfetti cookies looks so festive and fun!

Lastly, golden Oreos. There's just something about the vanilla flavor paired with the creme filling that reminds me of yellow cake, so I crushed them up and threw them in these frosting stuffed funfetti cookies just for good measure (and extra frosting!!)

To bring it all together, the dough is made with both vanilla and almond extract to make it taste like cake batter!

For the frosting:

  • unsalted butter
  • granulated sugar
  • brown sugar
  • vanilla extract
  • almond extract
  • eggs
  • golden Oreos
  • rainbow sprinkles

How to make frosting stuffed funfetti cookies

Let's run through the process of making these real quick.

Frosting

The first thing you're going to do is make the frosting, because it needs to chill for just a little bit before we use it in the cookies. Making the frosting is simple; just add all the ingredients to the bowl of an electric mixer and combine. At first, it will look clumpy and like it won't come together, but just keep mixing! I promise it will.

The frosting is designed to be very thick- this is so that it stays intact while baking and so that it's easy to roll into individual balls. The balls of frosting should be about the size of 1 teaspoon. After you've rolled all the frosting, put them on a parchment-lined tray and pop them in the freezer to firm up.

Cookie dough

Next, the cookie dough! We start by creaming together the butter and sugars, then adding vanilla extract, almond extract, and the eggs. Once that is all combined, add all the dry ingredients and mix.

Lastly, the mix-ins! Grab your crushed Oreos and funfetti sprinkles and add them to the dough. Fold them in using a rubber spatula.

Transfer the dough to the fridge to chill for at least 2 hours. Chilling the dough ensures these cookies bake up thick and soft on the inside. It also gives the dough time to let all the flavors "marinate" together- believe it or not, this really makes a huge difference in the flavor!

Stuffing the cookies

Now, after the dough has chilled sufficiently, it is time to stuff the cookies with frosting. I experimented with different ways of doing this and found the best way to stuff the cookies is to:

  1. scoop some dough into a large cookie scoop
  2. press a hole into the middle using your thumb
  3. insert the ball of frosting
  4. cover the hole with dough

This way all the cookies come out evenly sized!

If you don't have a cookie scoop, you can take two pieces of dough and flatten them into discs. Then, put the frosting ball in between the two discs of dough and pinch together the sides, and roll it into a smooth ball.

What's the best way to crush the golden Oreos?

My favorite way to crush up Oreos is with a plastic bag and a rolling pin. You can control how big or small the pieces get, and make sure the Oreos don't turn completely into dust.

Another way you could crush the golden Oreos is by pulsing them in a food processor (the faster option.) I don't usually do it this way because I find that even if I only put them in for a second, some of them still end up too finely crushed. Plus, it's another thing you have to clean!

Frosting

  • 2 tbsp unsalted butter (room temperature)
  • 3/4 cup powdered sugar
  • 1/4 tsp vanilla extract

Funfetti cookies

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup unsalted butter (room temperature)
  • 1/2 cup granulated sugar
  • 2/3 cup brown sugar (lightly packed)
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 2 eggs (room temperature)
  • 20 golden Oreos (crushed)
  • 1/2 cup rainbow sprinkles

Frosting

  1. In an electric mixer, cream together the butter, vanilla, and powdered sugar until combined. Mixture may look clumpy at first, but it will come together- just keep mixing.

  2. Roll balls of frosting into 1-teaspoon sized balls; place on a baking sheet and transfer to the freezer while you make the funfetti cookie dough.

Funfetti cookies

  1. Combine the dry ingredients: flour, baking soda, baking powder, and salt. In an electric mixer, cream together the butter, granulated sugar, and brown sugar until creamy. Add in the vanilla, almond extract, and eggs and combine.

  2. Gradually add in the flour mixture and mix until a dough forms. Add the crushed oreos and rainbow sprinkles; distribute through the dough using a rubber spatula. Chill the cookie dough for at least 2 hours, up to overnight. Leave the dough out for a few minutes before scooping to allow the dough to soften a little.

  3. Preheat the oven to 350°F and line a baking sheet with parchment paper.

  4. Using a large cookie scoop (about 1/4 cup) fill with cookie dough; press a hole in the center and fill with a frozen frosting ball. Cover with more cookie dough and place on baking sheet.

  5. Bake cookies for 10-12 minutes, until edges are lightly golden. Transfer baked cookies to a wire rack to cool.
